Tahini Lettuce Wraps
So often we get busy in the weekly grind that it can be tough to find meals that are easy, delicious, nourishing and schedule-friendly. These lettuce wraps are one of my favourite go-to meals when you have to whip up something quickly and it makes for a super fun eating experience!
Spring time is when I start to crave those cooler, lighter meals. I start to shift out of my winter hibernation, which consists of lots of warm and hearty meals, and my body starts longing for that spring time freshness. This recipe is bursting with that freshness and it has the most satisfying crunch and flavour.
I am a huge fan of citrus. I absolutely love it. These lettuce wraps just aren’t the same without freshly squeezed lemon juice. It is one of the best ways to complement and bring out other flavours in a dish. It also adds so much brightness and dimension; this is another reason why lettuce wraps never get old. Lettuce wraps also leave lots of room for creativity and imagination. I am a big fan of rotating ingredients and shaking things up (for example, adding or substituting different proteins or vegetables) so do not feel limited by the ingredients list!
Ingredients:
1 cucumber
1 red pepper
1 yellow or orange pepper
1 ripe avocado
2 stalks of celery
3 stalks of green onion
1-2 chicken breasts (baked)
3 Tbsp. tahini
1 lemon, juiced
1 Tsp. dijon mustard
1/4 cup olive oil
Salt and pepper to taste
Directions:
Wash, dry and chop veggies and set aside into a large bowl. Separate lettuce leaves, wash and pat dry. Set aside on a large plate.
In a smaller bowl, mix together tahini, lemon juice, dijon mustard, olive oil and salt and pepper. Pour sauce mixture overtop of veggie mixture and toss to mix well. Place veggie mix into lettuce leaves and enjoy!
