Rainbow Salsa
This recipe will easily become a next family favourite. Use as a salsa for corn chips, enjoy as a salad on top of greens, use it to spice up a basic dish like BBQ chicken and rice (as seen below); the possibilities are endless. This rainbow salsa is just as flavourful as it is colourful and can be made in under 15 minutes.
Ingredients:
2-3 Ripe Mangos
1 large Avocado
1/2 a large Red onion
1/4 cup Cilantro (chopped)
Juice from 1 Lime
3-4 Roma tomatoes
Salt & pepper to taste
Directions:
Wash and prep all of your veggies and prepare your ingredients.
Chop your mango, avocado, onion, and tomato all in relatively uniform sizes (you don’t want your avocado to be over-ripe, otherwise it won’t retain its shape and texture).
Roughly chop your cilantro (feel free to substitute for parsley if preferred, as long as its fresh).
Place your ingredients in a medium-sized bowl, add your fresh lime juice, salt and pepper, and toss gently so you don’t end up with mushy salsa.
Give it a taste and serve by itself with corn chips or as a flavour enhancer to another dish.
