BBQ Veggie Kababs
Ingredients:
3-4 large zucchinis
4 small bell peppers
1/2 a large red onion
2 cups Mushrooms (cut in half)
1 tsp Garlic powder
1/4 cup Olive oil
1 tbsp Italian seasoning
1 Lemon (fresh squeezed)
1 tsp Salt
1 tsp Pepper
Wooden skewers (soaked in cold water beforehand)
Directions:
Preheat the BBQ to medium heat
Wash all your veggies and chop into 2-3 inch pieces and set aside
In a mason jar, dressing bottle, or a small bowl, mix together your olive oil, spices and fresh lemon juice. Shake or stir and set aside.
Soak your wooden skewers in cold water for 10 minutes
Begin skewering pieces of your veggies onto the skewers in whatever order you choose, I like to follow a pattern so you get lots of flavour with every kabab
Place on a baking sheet and brush on the dressing & season with some extra salt and pepper
BBQ kababs on the grill for 4-5 minutes on each side (or to desired level of cooking).
Remove the kababs, let cool for 5 minutes and enjoy!
